The rise of GLP-1-forward formulations may be less about creating foods for a specific, albeit growing, consumer group and more about developing nutritionally dense products for everyone.
While the conversation around GLP-1 medications often focuses on weight loss, the drugs are also reshaping how formulators and manufacturers think about food. Because users typically consume smaller portions, brands are increasingly challenged to pack more nutrition into less food. That has fueled innovation around protein, fiber and other nutrients that support satiety, while creating opportunities for brands to meet broader consumer demand for convenient, functional foods.
For food manufacturers, the trend aligns with several existing consumer shifts, including growing interest in health and wellness, functional ingredients and snacks that increasingly blur the line between indulgence and meal replacement. At the same time, higher grocery prices are forcing consumers to think more critically about nutritional value, creating opportunities for products that deliver multiple benefits in a single serving.

According to Anke Gold, senior director of R&D at Ardent Mills, many of the nutritional priorities driving GLP-1-focused innovation are not exclusive to medication users.
The overall products designed for a growing base of GLP-1 users shows that these nutrients are needed by the overall population as well, Gold says.
Gold pointed to fiber as a key example. While fiber has become a common component of GLP-1-centric formulations, it also addresses a broader nutritional gap among US consumers.
More broadly, Gold says consumers are increasingly seeking what is increasingly described across the food industry as benefit stacking, with multiple nutritional attributes bundled into a single product.
“Consumers are truly looking not just for one benefit” in the form of protein or fiber, she added.
For formulators, those nutrition goals must still be balanced against taste, texture and shelf stability, particularly as higher protein and fiber levels can alter how products perform.
Micronutrients emerge as the next frontier
Protein and fiber may have opened the door to a broader wave of formulation innovation centered on micronutrients, including vitamins and minerals.
As consumers eat smaller portions but still require adequate nutrition, Gold expects manufacturers to devote greater attention to delivering a wider range of nutrients in compact formats.
“It’s a great opportunity just to come up with a product that provides micronutrients in a smaller format,” Gold said. “That’s always exciting when we can contribute to creating healthier food for everyone.”
Whole grains, Ardent Mills’ area of expertise, could play an important role in that evolution, she added, helping manufacturers bridge both macro- and micronutrient needs within a single product.
Looking ahead, Gold expects additional research to uncover nutritional gaps that could shape the next generation of products.
“I think there will probably be more research being done on what some of the missing nutrients are,” she said. “And I think there will be some focus also then shifting to the micronutrients.”
The industry’s focus on “benefit stacking” is also likely to expand beyond today’s emphasis on protein and fiber.
“I think what we’ve been seeing is that term benefit stacking I had mentioned earlier, where that one will probably evolve even further, where it’s not only protein and fiber,” Gold said. “I mean, it’s truly about let’s say whole grains. At some point, I’m sure micronutrients will be required as well.”
